Application and ordering
In horeca and foodservice, calamari is most often prepared as fried squid rings, grilled or stuffed squid tubes, or as a tapas dish with squid tentacles. Whole squid lends itself to grilling or frying whole; the smallest size in the range (the puntilla reference, 80-UP pieces per kg) is often served whole as a small dish, while the larger whole squid (from 3-6 pieces per kg) is usually cut into pieces for use in pasta or rice dishes. Squid tubes come in two size groups: U-10 tubes are smaller and suitable for smaller portions or for cutting into rings yourself, while U-5 tubes are larger and are more often stuffed and grilled or pan-fried. Part of the range is already pre-treated: blanched (including the matsukasa fillets and the Loligo rings) or cooked (the tentacles), which shortens preparation time in the kitchen. Prices become visible after logging in to the webshop; buyers who do not yet have access can contact Epic for a quotation.
