Octopus and baby octopus
Epic supplies frozen octopus and baby octopus to horeca businesses and wholesalers in Belgium and across Europe, in three forms: baby octopus, cleaned whole octopus from Spain, and cooked tentacles. Baby octopus comes in four size grades, the whole octopus ranges from 1 to 4 kg per piece, and the tentacles are available loose or vacuum packed. Application and ordering
In horeca kitchens, baby octopus is often prepared whole: grilled or roasted as a tapas dish, or briefly stewed in a Mediterranean preparation. A lower size grade (11-20 pieces per kg) gives larger specimens that suit a main course or a prominent position on the plate, while a higher grade (61/up) gives smaller, more numerous pieces that work well for tapas or buffet portions. The cleaned whole octopus from Spain is larger (1 to 4 kg per piece) and is usually cut into pieces after cooking, for example for pulpo a la gallega or for further in-house processing into tentacles. The cooked octopus tentacles are already pre-cooked and ready to use straight away: the loose references (100-150 g/pc and 150-200 g/pc) are often grilled again or seared briefly for a crispy exterior, while the vacuum packed reference (2-3 pieces per unit) lends itself well to portioning per dish.
