Thai-style prawn burger

    A delicious shrimpburger with an Asian twist, flavoured with lemongrass, garlic, shallots and fresh herbs. Served on a soft bun with crisp lettuce, fresh cucumber and a spicy-sweet sauce.

    Ingredients

    • For the burger:

      • 4 EPIC shrimp burgers

      • 1 stalk of lemongrass (sereh), just the finely chopped lower part

      • 2 shallots, finely chopped

      • 2 cloves of garlic, crushed

      • 1 tablespoon of mayonnaise or red curry paste

      • 1 tablespoon of fish sauce

      • soya sprouts

      • A handful of fresh coriander and spring onion, finely chopped

    • To finish:

      • 4 soft burger buns

      • Crisp lettuce (such as romaine or iceberg)

      • Cucumber or a quick cucumber salad (thinly sliced with a dash of vinegar)

      • Sweet chilli sauce or a fresh curry mayonnaise

    Cooking Instructions

    1. Deep-fry the shrimp burgers for 6–7 minutes at 175° OR defrost them first and then fry them in a pan.

    2. Mix the lemongrass, shallot and garlic with the fish sauce and mayonnaise.

    3. Cut the buns in half. Top the bottom half with a lettuce leaf, the burger, the fresh mixture and soya sprouts, and finish with spring onion or coriander.
