The range comprises five variants, from large (6/8 pieces per lb) to small (16/20 pieces per lb), plus a separate Yoga style reference at 13/15. Application and ordering
In horeca kitchens, frog legs are most often prepared in the classic French way, pan-fried in butter with garlic and parsley, or deep-fried as a starter in an Asian-inspired preparation. A lower size figure (6/8) means larger, meatier frog legs that lend themselves to a main course; a higher figure (16/20) gives more, smaller pieces per portion, suitable for plated dishes or buffet preparations. All sizes are available as a frozen product for foodservice distributors, wholesalers and horeca businesses.
