Crab and crab meat

    Application and ordering

    King crab single legs are precooked and are usually served warm as part of a seafood platter, as a buffet centrepiece or cracked open at the table; the easy peel and window cut variants are scored so the meat can be released without crackers, which saves time in a busy seafood restaurant or on a buffet line. The split version is already cut lengthwise for faster plating. The leg segment (merus) is the thickest, meatiest part of the leg, supplied shell-free, and lends itself to an individual main course portion without any shelling work at the table. King crab meat and snow crab meat arrive loose, already cooked and out of the shell, in blocks of 450 g or 2.27 kg: that makes them suitable for preparations where crab meat serves as an ingredient, such as salads, bisques, crab cakes or as a filling for sushi or pasta, rather than as a standalone main course. The size designations (L4, L5, 40/60, 30/70) are the standard gradations in the trade for leg size and meat piece size respectively; a lower figure means larger pieces and therefore fewer pieces per unit of weight.
