Are scallop meat, coquilles and sint jacobsvruchten the same thing?

Yes. In the Epic range these three names refer to the same product: the meat of the scallop, as used in the kitchen. In the webshop it is listed as Scallops, on the pack as scallop meat, and Dutch speaking buyers search for it as sint jacobsvruchten or coquilles.

What does size 10/20 mean?

10/20 is the size grade printed on the pack. The lower the numbers, the larger the pieces. All three Epic references fall in this grade, so you compare UK and USA at the same size.

UK or USA: which one suits my kitchen?

Accepted Answer

It depends on your dish and your food cost. The UK scallops are slightly less sweet, usually a little yellower and darker, and cheaper to buy. The USA scallops are slightly sweeter and usually lighter and whiter. Within the same size grade they can replace each other in many dishes.

Is there an MSC version?

Yes, on the USA side. In the webshop only the USA MSC reference (SCAROFFUSMSC010_0800) carries the MSC mark. The standard USA reference and the UK reference do not have it in their product name.

How much is in a carton?

Accepted Answer

Each unit is 800 g. For the UK and the standard USA reference a carton holds 12 units, 9.6 kg in total. For the USA MSC reference a carton holds 10 units, 8 kg in total. Allow for the smaller carton if you switch between variants.

How do I store and use it?

Accepted Answer

The label of the UK reference says: store at -18 °C, do not refreeze after thawing, and the product is raw and must be heated before consumption. It also states that it may contain crustaceans and fish. Read the label of the batch you receive on every delivery.

The roe is the orange egg sac of the scallop. All three references on this page are roe-off, listed as roeless in the webshop.
