Application and ordering
Epic offers black tiger prawns (also known internationally as black tiger shrimp) in five product forms, each with its own application. Head-on prawns keep their full shape and are the choice for presentation dishes such as grilling, barbecue or a classic gamba dish where the head comes to the plate. Shell-on prawn tails are more versatile in the kitchen and lend themselves to both boiling and grilling. Easy peel prawn tails have a scored shell, which speeds up peeling at the table or in the kitchen and saves labour time on larger volumes. The block-frozen real count prawn tails (1.44 kg per block) are intended for high-volume use and further processing; real count indicates a count excluding glaze weight, a more precise size indication than a count on packed weight. The raw peeled prawns (size 16/20, 750 g unit) are fully peeled and ready to use straight away, for example in a pasta, wok dish or curry, with no preparation time in the kitchen. For all forms the same rule of thumb applies to the size indication: the lower the number, the larger and meatier the prawn, and the higher the number, the more and smaller pieces there are in the same pack.
