Application and ordering
Carabinero and Argentine red shrimp are premium deep-water shrimp with an intense, sweet flavour and a striking deep red colour that holds even after cooking. In horeca kitchens they are mostly served with head and shell: briefly grilled on the plancha, flambéed in cognac or whisky at the table, or served raw as crudo or tartare at the better addresses. The size of 10-20 pieces per kg means that each shrimp weighs, depending on the exact count, somewhere between 50 and 100 g: large enough to plate per piece or per two, unlike smaller shrimp sizes that are served by the handful. The distinction between frozen at sea and frozen on land lies in the moment of freezing after the catch: shrimp frozen at sea are frozen almost immediately after the catch on board, while shrimp frozen on land are only frozen after arrival in port. Both freezing methods are common in the frozen fish and shrimp trade and are offered separately so that a kitchen or wholesaler can choose based on its own preference or specification. Carabinero and Argentine red shrimp target mainly the premium segment of horeca: restaurants, caterers and event caterers that want to offer a head-on shrimp as an eye-catcher on the plate, rather than high-volume kitchens that process peeled shrimp in bulk.
