    Application and ordering

    Cod loins are the most versatile whitefish reference in the Epic range: the skin stays on during cooking, which helps the loins hold their shape in the pan or oven, and the portion size of 150-200 g per piece makes them suitable as a fixed main-course portion in horeca and catering concepts. The MSC-certified variant (780 g unit) offers a sustainability certificate for buyers who need to demonstrate it to their own customers, alongside the standard 800 g reference. The lightly salted, deboned loins in a 2 kg unit are intended for high-volume users who portion or process the product themselves. The MSC Cape hake loins are formed into a uniform loin shape and supplied in bulk in 5 kg units, which makes them attractive for foodservice distributors and large kitchens that order by weight rather than in fixed piece packaging. Atlantic sole is available in six variants: single fillets at 60-90 g/pc and 80-120 g/pc for individual portioning, composed fillets of two to three sole pieces assembled into a single portion at 80-120 g/pc, whole ready-to-cook sole at 175-225 g/pc for a classic bistro preparation such as sole meunière, and rolled sole rolls for a plated presentation. The choice between single and composed fillets depends mainly on the portion size wanted per plate and on how many individual pieces of fish a chef wants to handle per portion.
